1 cup peanut butter
1 cup brown sugar
1 cup white sugar
2 eggs
1/4 cup milk
2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 cup white sugar for "decoration"
2 (9 oz) bags milk chocolate candy kisses, unwrapped
Cream together shortening (I used butter), peanut butter, brown sugar, and 1 cup of sugar until smooth. Then beat in the eggs one at a time. Mix in the milk and the vanilla. Add the flour, baking soda, and salt and mix until well blended.
Preheat oven to 375˚. Shape tablespoons full into balls and roll in sugar before placing 2 inches apart on a greased cookie sheet (I used a non-stick muffin pan because that's just what I had, and it worked well).
Bake for 10 to 12 minutes, and once done, remove from the oven and immediately press a chocolate kiss into the cookie. The kisses will become soft so be careful not to press on them once they warm. Can be eaten right away or after they've cooled – very delicious.
Almost a week later, I have just one left – and keep in mind that I've been sharing them with my roommates and their guests – and they are still unbelievably satisfying.
